We must first understand the meaning of the word “terroir or terroir”, this term is closely related to the soil in which it is planted, it is a specific space that under the influence of various factors such as micro-climate, temperature, aeration, hours of insolation, humidity, altitude, latitude, soil type, among others, allows achieving a specific and identifiable product.

You can not speak of an authentic terroir tequila (land) if the brand that exhibits this distinction is not an agave producer, since it would not have control of the care from its plantation, we are agave producers, and for each of our batches organic, the agave was selected from a specific terroir, that is to say from a defined area, with this we guarantee to drag the contribution of the earth to the glass, the reality is that 99% of the tequilas that exist in the market today have no control over the provenance and they will hardly have the traceability since the hijuelo (baby agave) was planted.

For us the “terroir” (land) is everything, for this reason in our labels of the organic collection we always emphasize the name of the specific terroir from which the agave was extracted, since each of our batches is the product of an organic agave Planted in a limited area for its later “Jima”, allowing not only the agave to express itself, but also its origin. In our organic collection we never mix agaves from different areas or ages, this guarantees the real contribution of the terroir and the supreme quality in our spirits.

Agave>

Hijuelo: In the case of the blue agave, its reproduction is by shoots or seedlings that the mother plant itself produces throughout its life via rhizome (although those harvested between the third and fourth years are the most appropriate). Those between 8 and 11 cm are considered to be the best. There are other agaves that reproduce mainly by seed.
Jima: It consists of cutting the maguey leaves and the root to leave only the heart also called pineapple. This process is done especially with the so-called coa, a sharp metal semicircular object and with a wooden handle to hold it.

SANTIAGUITO TOWN

In La Guasima the hijuelo was established in May 2016, clay soil with a highly mineral reddish coloration caused by its proximity to the Tequila volcano, we have a vast biodiversity, in this terroir the plantation table is 1.40 X 2.40mt, care of the plot is carried out with organic farming method.

La Guasima Biodiversity:

Mexican Maple

It is a species native to North America, but widespread throughout the world. It is a tree of medium to large size, fast growing, highly reproductive and resistant, the life expectancy is 60 years.

Nopal Chamacuero

Opuntia cochenillifera has an expanding tree structure, with multiple ascending branches and trunks of up to 20cm. It can achieve a size of between 3 and 4m. Xeofita plant, it has a cylindrical stem and its branches (stalks), they are fleshy and oval-shaped plants .

Guacima tree

Medium-sized tree of the malvaceae family, native to tropical America of perennial flowering, a species of Guazuma, also known as Caulote, Majahua, Acorn of Cuaulote, Guacimo calf, Cablote and Chicarrón.

Hares

Hares are classified in the same family as rabbits. They are similar in size and shape to rabbits and eat the same diet. They are generally long-eared, herbivores, fast runners, and typically live alone or in pairs.

Lizard

Flattened body with very small, granular dorsal scales. Variable color within the brown or greenish tones with almost smooth designs, formed by longitudinal or reticulated bands. It reaches about 16 cms., Of which approximately 10 correspond to the tail.

Rattlesnake

SANTA CRUZ DEL ASTILLERO

It is located in the El Arenal Municipality of the State of Jalisco, Mexico, the total population of Santa Cruz del Astillero is 2376 people.

 

Generals

In El Llano Grande the hijuelo was established in May 2016, clay soil, we have ample biodiversity, in this terroir the planting table is 1.30 X 2.50mt, the care of the plot is carried out with organic farming method.

Weather:

It has a semi-humid semi-warm climate. The annual average temperature is 21.0 ° C, while its average maximum and minimum ranges between 32.8 ° C and 8.4 ° C respectively. The average annual precipitation is 998 mm.

El Llano Grande Biodiversity:

Mango

Mango is a large tree native to the Indian subcontinent. Its most popular characteristic is a tropical fruit, it needs at least 6 hours of sun a day and preferably 8 to 10 hours. Mango grows best in deep, well-drained soils that are slightly acidic.

Bitter Orange

Popotillo Pajon
