Pablo Lara
Founder of Casa Santanera, a brand that has not only redefined the way tequila is made but has also placed respect for time, agave, and the land at the heart of its mission.
The Start of a Dream
When Pablo Lara first embarked on his journey in the tequila industry, most people didn’t believe that a tequila rooted in terroir, agave authenticity, and sustainability had a future. The industry was focused on mass production and speed, seeking to cut costs at the expense of quality. However, Pablo saw an opportunity in the midst of the tradition of this spirit and decided to take a different path: one where respect for the land and nature were essential.
The Vision of Sustainability
For Pablo, tequila had to be more than just a drink; it had to be a way to connect with nature. With this vision in mind, Casa Santanera became a pioneer by incorporating organic farming practices in agave cultivation, promoting soil regeneration and protecting the local ecosystem. In addition, Pablo spearheaded the inclusion of the age of the agave on every bottle’s label, a move that not only highlights the product’s quality but also emphasizes the respect for the time it takes for each agave to mature and develop its flavor.
The Green Distillery: A Sustainable Model
After 24 years of dedication and perseverance, Pablo’s dream finally became a reality in 2024 with the creation of a green distillery designed to minimize environmental impact and redefine tequila production. Built on sustainability principles, the distillery operates with an innovative approach:
- Gravity-fed process: Reduces energy consumption by eliminating the need for excessive pumping.
- Rainwater harvesting: Captured and reused for production and facility operations.
- Solar energy: Lowers reliance on conventional electricity sources.
- Geothermal heat utilization: A natural tectonic fissure releases heat exceeding 100°C, used for agave cooking and distillation without fossil fuels.
Every detail of the distillery is crafted to honor time, the land, and the agave, ensuring a more sustainable future for tequila.
A Legacy of Respect and Quality
What began as an unconventional idea is now a well-established reality. Casa Santanera has not only succeeded in creating a tequila that honors its origin and process, but it has also proven that the tequila industry can evolve into a more sustainable and responsible model. Through his work, Pablo Lara has paved the way for those who believe that doing the right thing is, in the end, the only thing that matters.
