Casa Santanera presents Lote Partida, a tequila that pays tribute to Don Jesús Partida, founder of Destilería 3 Mujeres and mentor to Pablo Lara. From day one, Don Jesús opened his doors, offering not only a place to distill but also his wisdom, experience, and unwavering support. For eight years, that distillery was the home where Santanera grew, refined its craft, and defined its identity.
Batch Partida symbolizes our own “departure” from Destilería 3 Mujeres. It is the eighth and final batch of the Organic Terroir collection produced in this space—a closing chapter marking the end of a crucial stage for Santanera. This batch is a testament to the knowledge gained, the support received, and everything made possible through Don Jesús’ generosity. From now on, Lote Partida represents the beginning of a new era, as the ninth batch will be the first produced in our own sustainable distillery.
The label of Batch Partida, created from the fusion of the seven colors of the previous batches, reflects our evolution and the journey ahead.
A tequila that honors shared knowledge, cultivated friendship, and, above all, gratitude for the lessons learned.

Hillside Agave
Each batch in our Organic Terroir collection imprints its character on the agave, and with Lote Partida, we chose to honor this influence by exclusively harvesting from hillside terrain, a practice that shapes this tequila’s unique aromatic profile.
Hillside agaves grow on sloped land, where rainwater follows its natural course. In response, the plant absorbs more water and develops less fiber, resulting in a smoother and more expressive profile. When distilled, this agave unveils enhanced fruity and floral notes, with a delicate sweetness that reflects its environment.
This batch comes from Tequilana Weber blue agave, planted in 2017 in the Tezontle terroir and harvested in 2024 after seven years of maturation. Its origin and harvesting method give it a distinct identity—a testament to the soil, time, and artisanal technique that shaped it. Lote Partida is not only a tribute to those who have accompanied us on this journey but also a pure expression of the land in its most authentic form.

Organic Juice Extraction
On July 3, 2024, at 11:00 a.m., we began milling our supreme agave, completing the process around 3:00 p.m. We obtained a total of 21,737.60 liters of must at 11.85 Brix, with a fermentation tank temperature of 30°C.

Sonic Harmonization
Fermentation with Mozart
We are in the summer season in El Arenal, Jalisco, with average temperatures ranging from 28°C to 39.5°C. As always, our yeast was accompanied by Mozart’s classical music 24/7. We have confirmed that this sonic exposure fosters the creation of new esters.
Note: Since #BatchPiedra we have chosen to work with wild yeast, a decision made to preserve the agave’s natural characteristics and push the terroir’s influence to its fullest expression.
Natural Fermentation in Summer & Wild Yeast
This stage is where most aromas develop, heavily influenced by the external temperature and the season in which fermentation occurs. Lote Partida was fermented during summer, requiring us to shorten the fermentation time. The high temperatures accelerate the process, resulting in a fresher, fruitier tequila with greater intensity and acidity. At Casa Santanera, we distill micro-batches, each serving as an organic and unrepeatable testimony of the moment it was produced.

His father, Don Rodolfo Rivera Rivera, originally from Potrero de Los Riviera in Tequila, Jalisco, taught him the art of working with a still from a young age. Today, thanks to that legacy

Destruction and Rectification Cuts:
June 11 & 12, 2024
First Tequila in the World: Double & Triple Distillation Blend
On June 11, we began our distillation cuts, completing the process on June 12 at 1:00 PM. The first aromatic notes revealed by the process were olive and asparagus. Casa Santanera was the first tequila in the world to create a blend between cuts, bringing elegance and complexity to our Organic Collection.
Final Yield: 1,141.5 liters of tequila at 61% ABV.

Ancestral Rest
Today, June 14, 2024, at 11:00 AM, we began transferring our micro-oxygenation tank to the glass maturation area, an ancestral process that provides balance and helps refine the mouthfeel of Lote Partida. The result is a greater smoothness, taming the alcohol’s attack, leaving a silky and velvety sensation from the mouth to the throat. This is the second batch from our ‘Organic Terroir®’ collection in which we’ve incorporated this process, and we are excited to share it with you soon.
