For this collection we decided to press our supreme agaves with a Tahona volcanic stone,
an ancestral method that allows us to extract the agave juices in a concentrated way,
thus achieving a broader aromatic spectrum with a long permanence in the mouth.

VOLCANIC STONE
Tahona is an Arabic term, which translates to "mill". This mill consists of a large stone carved in the shape of a wheel, attached to a post in the middle of a slope, where traditionally a donkey or a mule would constantly pull forward in circles. In this way, the agave cooked at the bottom of the slope was crushed or ground to extract the juice from the agave, this method allows access to more sophisticated and powerful aromas.

Thanks to its microporosity, concrete vats provide better oxygenation, it is more insulating than stainless steel, which makes it easier to keep the must at a stable temperature during the fermentation process. This has a stabilizing effect on the temperature of the broth, avoiding peaks that harm our wild yeasts. Inside the concrete vat everything is more gradual, smoother, without sudden thermal changes.
